Ingredients :
6 Medium sized white onions
5 Shrimps (deveined and shelled)
6 Large scallops
40 gm Calamari
60 gm Brocolli (parboiled)
1 cup Light sour cream
30 gm Butter
2 slices Cheese
Preparation :
- Trim away the top and bottom of the onion to prevent tipping.
- Spoon out the inside to form a deep case.
- Prepare and cut shrimps, calamari and scallops into bite sized pieces.
- Melt butter in frying pan and stir fry the seafood till just about cooked. Add salt and pepper to taste.
- Boil the brocolli in salted water.
- Place the stuffings in the onion case and fill with the cream.
- Cut the cheese into small bits and put them on the top of the onions.
- Cut the brocolli and set them on top of the onions.
- Bake the onions in a preheated 200oC oven for 15 - 20 minutes, until the surface is crisp.
