Baked stuffed onions

From fridge to dining table : 30 minutes

 

Ingredients :
 
6     Medium sized white onions
5     Shrimps (deveined and shelled)
6     Large scallops
40   gm Calamari
60   gm Brocolli (parboiled)
1     cup Light sour cream
30   gm Butter
2     slices Cheese
 

Preparation :
  1. Trim away the top and bottom of the onion to prevent tipping.
  2. Spoon out the inside to form a deep case.
  3. Prepare and cut shrimps, calamari and scallops into bite sized pieces.
  4. Melt butter in frying pan and stir fry the seafood till just about cooked. Add salt and pepper to taste.
  5. Boil the brocolli in salted water.
  6. Place the stuffings in the onion case and fill with the cream.
  7. Cut the cheese into small bits and put them on the top of the onions.
  8. Cut the brocolli and set them on top of the onions.
  9. Bake the onions in a preheated 200oC oven for 15 - 20 minutes, until the surface is crisp.
